Bean burgers with salsa, guacamole & queso for breakfast

Black bean burgers on homemade english muffins with homemade salsa, Nacho Mom’s queso, and guac

Salsa recipe:
Around 20 roma tomatoes
About 11 jalapenos
1 large onion
1 head garlic
big squirt of lime juice
dash of red wine vinegar
sprinkle of sea salt
shake of coriander
2-4 canned chipotle chilis

Cut tomatoes in half and place in a couple foil lined pyrexes, cut side down. Cut jalapenos in half, deseed half of them. Throw the jalapenos on top of the tomatoes. Roast at 420 degrees for at least 40 minutes, until peppers start blackening on edges.

Place half of roasted veggies in blender with half of the rest of the ingredients. Then blend the other half. You get to have two different batches, it’s so fun to see how they taste different!
